THE SECRETS OF MASTER SIMÕES

Steak with Azeitão Cheese DOP (For Two)

1 SIMÕES AZEITÃO DOP (Small)
4 Steaks (400gr)
20g Plain Flour
50g Breadcrumbs
2 Eggs
4 Garlic Cloves
Pepper, Olive Oil and Salt

Preparation

Season the meat with salt and pepper before. Spread a good portion of cheese on each steak.
Pair the steaks by the greased part and secure them with toothpicks.
Pass the steaks through flour, egg and bread.
Take a frying pan with olive oil and crushed garlic and fry the steaks. Serve with a salad.

“Arrábida’s Delight” Pie

Filling

500 gr Cottage Cheese AZEITÃO SIMÕES
250 gr Sugar
100 gr Butter
4 Eggs
15 gr Plain Flour

Base

Shortcrust Pastry

Preparation

In a bowl, combine the eggs with the sugar.
Mince the cottage cheese. When cooked add the
shredded cottage and the butter and beat it
with the mixer. Pour the flour and wrap.
Line the pie plate with shortcrust pastry
and with a fork prick the bottom and fill
the plate with the filling. Put in the oven, previously
heated at 180ºC, to bake about 40-50 minutes.

Master Simões Salad (For One)

200 gr Fresh Sheep’s Cheese SIMÕES
1 Apple
Arugula, Vinegar, Olive Oil, Honey, Walnuts and Salt

Preparation

Cut the cheese in cubes and the apple in slices.
Make a preparation of Olive Oil, Vinegar, Honey and Salt apart.
Join the arugula to cheese and apple, pour the prepared and wrap it.
Finally add the walnuts and serve.
